My apple tree, a 15-year old Egremont Russet, fruits prolifically one year, and not at all the next. What can I do to get a (smaller OK) crop every year?

To reduce biennial bearing, you can reduce the crop by thinning quite hard in the on years, and feed during the summer of the on-year. Prune a little more in the off-year, especially summer pruning, shortening back new shoots.
