is it ok to prune an apple tree and when is the best time hasnt given any fruit yet only sown two years

This is a young tree and only in training. It is important to differentiate between training to shape the tree and annual pruning.

Essentially, for the first few years, you let it grow just taking out surplus or badly placed branches and shortening overly long ones.

Annual pruning simply aims to keep the tree to a suitable size while maintaining a turnover of healthy shoots, taking out and shortening some old shoots each year and allowing new ones to take their place.
