Mustard is used as a green manure. It is quick-growing and the seeds are sown in late summer or autumn usually and the crop allowed to grow over winter. Crops can be sown at other times to enrich the soil.

The green tops are dug in fresh into the soil and provide nutrients for the soil microflora to thrive. SOil quality and fertility are improved. Mustard is considered to have a mild fumigant and weed control effect.
