I would be most grateful if you could advise me to Fruit Grafting courses coming up in the next few months in the Leinster area. I haven`t had any luck to date.

It is very unlikely that there are any courses on grafting. Although it is a skilled task, most forms of grafting are easily learned from books, the key principle being to keep the cambium of the rootstock and scion in contact. The cambium is the slippery layer between the wood and bark.
