Onion gone to seed

I planted onion sets last sept and last week I noticed that some are going into seed, what should I do should I harvest them or dead head them or are they ready to harvest.

Japanese onion sets, or autumn onion sets, can be planted in late summer or early autumn but they run the risk of bolting … going to seed, as yours have done. Sometimes it is worth the risk because it gives an early crop of onions in summer.

The bolters will put all their energy into making the flower, so cut away the flowers and the bulbs can be used, although often they are reduced in size and these do not store well, so use them first.
