Every year we try growing potatoes and before we get to dig them out they are attacked by this slug and are full of holes

There is a good chance that you are using manure or compost on the potatoes and this encourages slugs. Use just bag fertiliser instead for a few years.

Also some varieties are more susceptible to slugs, Use early varieties that can be lifted and used earlier and ‘Golden Wonder’ and  ‘Sante’ have some resistance.
