Round up was sprayed between Potato drills 2 weeks ago, are the potatoes safe to eat?

Roundup, as herbicides go, is a very low toxicity product but even so it is not ideal to ingest any chemical.

If the spray did not get on the potato foliage, there is no problem as it is not transmitted by soil. 

If it got on the foliage, it may have transferred and the tubers would contain tiny amounts. These amounts can be enough to affect growth, it the tubers were used for planting next year.

For comparison, Roundup is sometimes sprayed on pasture before silage is cut, and this is later fed to animals that produce milk and meat.
