Are there any issues with using fresh shredded branches as garden mulch. Any trees to avoid?

There are no issues of concern.

In theory, and the opinion is sometimes expressed, woody material could lead to an increase in honey fungus disease, but in reality this is very unlikely as other fungi are much more likely to feed off the material.
