Cabbage grew to maturity. Within 2 weeks the centre of the heads burst and produced green shoots. What would have caused this and how can I prevent it?

That is how cabbage produces its flower stems and, eventually , its seeds. A head of cabbage is nothing more than a big bud and it bursts to produce a flower.
This happens to all cabbage plants eventually but usually only after a period when the bud stays dormant. This period can be months in winter and just a couple of weeks during times of exceptionally strong growth, which has been the case lately.
If you use F1 hybrid seeds, the entire crop is the same and will bolt at the same time. Older non-hybrid seed types have more variation and can last longer in the row.
