freezing garden veg

Which garden veg can I freeze for Winter? I grow shallots, onions, peas, broad beans, cabbage, spinach, lettuce, spring onions, pak choi and courgette and leek.

Shallots and onions will keep in a dry, cool store. Peas and broad beans can be frozen when fresh. Cabbage is not nromally frozen as it is bulky. Spinach can be frozen, usually alrady cooked. Pak choi is used fresh. Courgettes could be cooked and frozen. Leeks will stand outdoors for winter use.
