Last year my cordyline, phormium and mahonia plants died because of the bad weather but have now re- sprouted again. Can you give my some advice as to how to protect them now from the very cold weather.

It is not really possible to protect the shrubs you have listed.

In theory, you could cover with old blankets or similar but these can cause damage if left on for more than a  few days, and if there are more than a few plants to cover it is not practicable.
