When to pick Butternut Squash?

I have grown Butternut Squash for the first time this year. How do I know when they are ready? Do they turn yellow once they get picked or do I have to wait for them to turn yellow before picking? Any advice would be appreciated.

Butternut squash can be used immature, like any cucumber family plant, but it is normally left to mature, turn yellow/orange and firm on the outside. It has not been a great year for these, as they need a lot of sunshine to do well.
